Eleven Waters Set to Open Soon in Former Hotel Syracuse
SYRACUSE, N.Y. -- From Syracuse salt potatoes to hand-crafted cocktails, Eleven Waters in the Marriott Syracuse downtown is looking to shake up the downtown dining scene.
"Eleven Waters is really a Finger Lakes bistro," explained Eleven Waters Executive Sous Chef Cody Dedischew. "We're focused on offering New York amazing products; that includes everything from the refreshed glasses that we use on the tables, which are recycled wine bottles ... [to] using different companies all from within, trying to keep within 100 miles of downtown Syracuse."
Along with the local food comes a local staff.
"The staff that we're bringing in is all people that are within that four-zip code area that is within the hotel," said manager Daniel Burchill. "We're really focused on bringing this hotel back to our community and being a pillar with the community again."
The bistro seats more than 100 people inside, and will have an outdoor patio with a fireplace. You don't have to go far to grab a drink. Their barbershop-themed bar is located right next to the restaurant.
"We have classic cocktails like 'The Pompadour' and 'The High and Tight,' things that reflect on its history," said Dedischew. "When you go in there, you see the remnants of the barbershop, and we left it there on purpose. You can see the history and really walk through history here at the hotel."
Eleven Waters will open September 1, and is already accepting reservations on Opentable. In addition to this restaurant, an Irish pub and a steakhouse are set to open toward the end of the year.
